Texas BBQ Style Baked Beans with True Bark Signature Flavors

Below is an authentic Texas BBQ–inspired recipe for smoky, savory baked beans that serve as a perfect side dish. This recipe incorporates your very own True Bark Traditional Blend and offers True Bark OG Sauce as an optional finishing touch. We add a touch of smoke by finishing the beans in a smoker loaded with post oak wood (our go-to) or, alternatively, pecan, hickory, or mesquite for extra flavor. A spritz of a 1 cup apple juice and ½ cup water mixture during cooking helps keep the beans moist and full of flavor.

  • 6 slices bacon, cut into ½-inch pieces

  • 1 medium yellow onion, finely chopped

  • 4 garlic cloves, minced

  • 1 cup tomato sauce (or ½ cup tomato paste thinned with ½ cup water)

  • ½ cup molasses

  • ⅓ cup brown sugar (packed)

  • 2 tablespoons yellow mustard (or prepared mustard)

  • 2 teaspoons apple cider vinegar

  • 1–2 tablespoons True Bark Traditional Blend (your custom dry rub; adjust based on your flavor preference)

  • Salt and freshly ground black pepper, to taste

  • 2 to 3 cups water or low-sodium chicken broth (adjust for desired bean consistency)

  • Optional Finishing: ¼ to ½ cup True Bark OG Sauce for a saucy glaze

For Smoking (Optional)

  • Wood Chips/Chunks:

    • Post Oak (preferred for an authentic Texas flavor)

    • Alternatives: Pecan, Hickory, or Mesquite

For Moisture During Cooking

  • Spritz Mixture:

    • 1 cup apple juice

    • ½ cup water

Step-by-Step Instructions

1. Prepare the Beans

  • If Using Dried Beans:Soak the beans in a large bowl of water overnight (or at least 8 hours) with a pinch of salt. Drain and rinse before using.

  • If Using Canned Beans:Drain and rinse the beans; set aside.

2. Cook the Bacon and Sauté Aromatics (15 minutes)

  • In a large, heavy Dutch oven or cast-iron pot, cook the chopped bacon over medium heat until crisp. Remove the bacon with a slotted spoon and set aside, leaving the rendered fat in the pot.

  • Add the chopped onion to the bacon fat and sauté until softened and translucent (about 5 minutes). Stir in the minced garlic and cook for another 1–2 minutes until fragrant.

3. Build the Bean Mixture

  • Stir in True Bark Traditional Blend into the onions and garlic.

  • Add the tomato sauce (or thinned tomato paste), molasses, brown sugar, yellow mustard, and apple cider vinegar. Mix well.

  • Return the crispy bacon to the pot.

  • Add the soaked (or canned) beans along with 2 cups of water or broth. Stir to combine all the ingredients.

  • Bring the mixture to a simmer, then adjust salt and pepper to taste. (If needed, add additional water to achieve your desired consistency.)

4. Cook the Baked Beans

  • Oven/Smoker Option:

    • Oven: Preheat your oven to 325°F. Cover the pot with a lid or aluminum foil and place it in the oven.

    • Smoker: Preheat your smoker to 250–275°F. Load the smoker with your choice of wood—post oak is ideal, though pecan, hickory, or mesquite work beautifully—and place the covered pot on the grate.

  • Spritzing:Every 45 minutes, open the pot carefully and spritz the bean mixture with the 1 cup apple juice and ½ cup water mixture to keep the beans moist.

  • Simmer:Let the beans cook slowly for 2½–3 hours, stirring occasionally, until the beans are tender and the sauce has thickened to your liking.

5. Optional Saucy Finish

  • If you prefer a saucier finish, stir in True Bark OG Sauce during the last 15 minutes of cooking or drizzle it over the beans just before serving.

6. Serve

  • Once done, remove the baked beans from the heat. Taste and adjust seasoning if necessary.

  • Serve hot as a hearty side dish.
